4 zucchini, each cut into 8 pieces
Wash, peel (peel can be left on) and cut zucchini into eighths. Mix dry ingredients together in a bowl and then bread the zucchini by dipping it into the mixture.
Beat eggs and dip breaded zucchini into the beaten eggs. Dip into dry mixture again and then into eggs for a final time.
Heat the oil in a 9" (approximately) fry pan. Fry zucchini for about 2 minutes on each side until golden brown. Place on paper towel to remove the excess oil. Cool. Reheat in hot oven on the cookie sheet prior to serving.
Best served fresh.
