1/2 onion, chopped
In a large skillet sauté chopped onions, garlic, and scallions in olive oil over a medium flame on range. When onions are soft add remaining ingredients and sauté for about 15 minutes. That's all there is to it.

1 tbsp. crushed garlic, rounded
1 green pepper
4 plum tomatoes
1 can diced tomatoes
1 can mushrooms, (you may use fresh, too)
3-4 scallions, finely chopped
4 oz. purple cabbage
olive oil
1/2 tsp. oregano
1/4 tsp. dry mustard
1/4 tsp. cinnamon
1/4 tsp. crushed ginger
1/4 tsp. lemon pepper
What you may do is add any chicken you would like. I suppose the chicken parts would be best. I don't know how it would taste with the chicken cutlets, but I suppose you could experiment with that. Also, at the same time the veggies and chicken are sautéing (add some extra time for the chicken to be fully cooked), cook some pasta, rice or even couscous for a well-rounded meal.
