Tzimmes, Roasted II (P, KLP, TNT)

Serves: 12 or more

1 lb. sweet potatoes or yams, peeled cut into 1" chunks
1 lb. Yukon Gold (or any firm flesh) potatoes, cut into 1" chunks
1 lb. small new red potatoes, scrubbed, halved
1 1-pound package peeled baby carrots
3 tablespoons olive oil
1/2 tsp. EACH of salt and freshly ground pepper
1 cup orange juice
1/3 cup EACH fresh lemon juice and honey
1/2 tsp. EACH allspice, ground cinnamon, and ginger
1 cup pitted prunes, (optional)
1/2 cup dried apricots, sliced (optional)

Pre-heat oven 350°F.

In large roasting pan, mix all the ingredients. Roast 1 hour, until brown and tender. (You may have to mix the ingredients once or twice during the baking).

Poster's Notes:
I made this recipe without the prunes, because my family is not crazy about them. It was delicious with the apricots and also without any dried fruit.
