6 bunches carrots, peeled, sliced 1/4" thick
6 large sweet potatoes or yams, peeled, sliced 1" thick
Syrup:
3 cups water
Pinch salt
3/4 cup brown sugar
1/2 cup white sugar
Knaidelach:
4 eggs
1/2 cup water

recipes)
1/4 tsp. salt
1 cup (approximately) matzo meal
1/2 cup (approximately) water
In saucepan, mix water, salt, and sugars. Heat on low heat until sugar is dissolved.
In bowl, beat eggs, water, schmaltz, and salt. Add matzo meal (about 1 cup) until consistency slightly thicker than cream of wheat, but not as thick as mashed potatoes. Let stand. Then add a little water (about 1/2 cup) and stir again. Let stand.
In large roasting pan, put 1/2 of the carrots in bottom. Pour matzo meal mixture into pan. Don't scrape bowl. Mix rest of syrup with remaining meal. Push sweet potatoes down around edge of pan. Put rest of carrots and sweet potatoes on top. Pour rest of syrup over top. Bake 3 hours at 350°F. Check every 1/2 hour or hour for liquid.
