Tzimmes, Mango Carrot II (D/P, KLP, TNT)

Serves: Varies, according to size of vegetables

6 carrots, peeled or 1 bag baby carrots or carrot coins
2 sweet potatoes, peeled
1 butternut squash, peeled and seeded
1 mango, peeled
3 ounces orange juice
1 tbsp. honey
2 tbsp. margarine or butter
1/2 cup brown sugar
Salt
Pepper

Pre-heat oven to 350°F.

Cut the carrots, sweet potatoes, squash, and mango in thin slices or medium-sized cubes.

Combine the orange juice, honey, margarine or butter, brown sugar, and salt and pepper.

Arrange the vegetables in a baking dish either mixed together or in layers of each vegetable. If layered, add a little of the orange juice mixture on top of each layer. If combined, mix all together with the orange juice mixture.

Cover with foil and bake for 45 minutes. Uncover and bake an additional 30 to 40 minutes or until tender. If they begin to brown too much, recover and lower the heat, baking until tender.

Poster's Notes:
This is a delightful combination of vegetables. The addition of mango and squash to the traditional tzimmes is wonderful. Be certain to purchase the mango as soon as possible so as to give it time to ripen.
