6 peeled carrots
Cut carrots, mango, and potato into 1/2" slices.
Arrange in a shallow baking dish. In a small bowl, combine remaining ingredients, pour over vegetables and mangos and cover with foil. Bake at 350°F for 30 minutes, uncover and bake another 10 minutes.
Elena Eder says: I add a piece of calabaza pumpkin or other large orange squash, the same size as the sweet potato. Don't remove peel until after it is cooked if at all to avoid it falling apart.

2 to 3 tsp. honey
2 tablespoons butter or margarine
