Use a roaster pan which can cook on top of the stove as well as in the stove.
Cook meat and onions in large roaster, covered with water on top of stove for 1 hour.
Add sliced carrots; cook covered for 1 hour.
Add peeled sweet potatoes, quartered, salt, and sugar. Bake in moderate oven for another hour (This can be done in advance and refrigerated).
The next day, preheat oven to 350°F and reheat tzimmes while preparing potato topping.
Peel and grate potatoes. Drain. Add salt, eggs, and oil. Spoon over tzimmes and bake for 1-1/2 hrs. until well browned. Tzimmes improves with age. Simply add a little water each time before reheating.

This is a guest and family favourite which earns rave reviews. It's DELICIOUS. Don't let the multiple steps discourage you. The end result is well worth it, and it keeps for several days.
