Tomatoes, Slow-Roasted I (P, KLP)

Serves: 8 to 10

4 to 5 garlic cloves, chopped
1/4 cup fresh oregano leaves
1/2 cup olive oil
Salt
Freshly ground black pepper
2 pints red cherry or grape tomatoes
2 pints yellow cherry or grape tomatoes

Preheat oven to 350°F.

In a medium bowl, combine the garlic, oregano, olive oil, salt, and pepper. Add the tomatoes and toss. Pour into a baking dish. Roast uncovered for 40 minutes.
