2 pound yams/sweet potatoes, baked
Heat ghee or butter in a large pot over a moderate heat. Add the brown sugar, and cook until it caramelizes and turns a reddish brown. Drop in the tomatoes and cook, gently tossing, just until they soften and glisten.
Add yams; using the back of a wooden spoon, mash and blend all the ingredients. When warm throughout, serve on a warmed plate and garnish with toasted almonds.
