2 tbsp. oil
Heat oil in pan, add sweet potatoes in a single layer. Cook until the potatoes are golden brown and tender.
Combine all other ingredients to make the sauce and once the potatoes are cooked to your liking take the pan off heat, pour over sauce, return to a gentle heat to warm the sauce through for a few minutes, then plate the dish and serve.
At this point you can cover with tin foil and put into the oven to keep warm, but be careful that it doesn't dry out.

1 tbsp. lemon juice
1 tbsp. crunchy peanut butter
