Sweet Potatoes, Roasted Savory Wedges (P, TNT)

Serves: 4 to 6

16 ounces sweet potatoes (approximately 2), peeled
1 tbsp. olive oil
1/2 tsp. curry powder
1/4 tsp. salt
1/4 tsp. ground cumin
1/8 tsp. ground cloves
1/8 tsp. pepper

Preheat oven to 425°F.

Cut sweet potatoes in half lengthwise; cut each half lengthwise into 6 wedges. Alternatively cut in 1/2" thick slices.

Combine sweet potatoes and remaining ingredients in a bowl; toss gently to coat. Place wedges on a baking sheet (do not overlap); bake for 25 minutes or until very tender.

Poster's Notes:
I got this recipe off the internet and it has become a regular in our house.

The spice combination is a lot more subtle than it sounds and I like that there is no added sweetener or any kind or margarine.
