Sweet Potatoes, Roasted w/Onions (P, KLP, TNT)

Serves: Depends how many sweet potatoes/yams are used

Sweet potatoes/yams peeled and cut in large chunks
Onions, peeled and cut in large chunks
Olive oil
Salt, to taste
Pepper, to taste
Herbs, to taste

Place small amount of oil in baking pan. Place sweet potatoes (yams) and onions in pan, toss to lightly coat with the oil.

Bake at about 375°F until the vegetables have some brown spots on them and the yams are fork tender.

Toss with salt, pepper, herbs to taste.

Poster's Notes:
I often will add winter squash and beets. This is a regular on my Shabbat table in the winter.
