1 sheet heavy duty aluminum foil (18"x24")
Preheat oven to 450°F, or gas grill to medium high.
Place potato, apples, and cranberries in the center of the aluminum foil and sprinkle with the sugar. Combine margarine and cinnamon and drizzle over the top.
Bring up the foil sides and double fold the top and ends to seal making one large foil packet but leaving room for heat to circulate inside.
Bake 25 to 30 minutes on a cookie sheet in the oven or grill 20 to 25 minutes in a covered grill until sweet potatoes are tender.

4 medium sweet potatoes, peeled and cut to 1/4" slices
2 Granny Smith apples, cored and thinly sliced into rings
1/2 cup dried cranberries
1/2 cup packed brown sugar
3 tbsp. butter or margarine, melted
1/2 tsp. ground cinnamon
This is a delicious, easy dish for the holidays. If you want to double or triple the recipe, make two or three foil packets. Don't try to put all the ingredients into one huge packet. It won't work.
