Roasted/Grilled Vegetables w/Marinade (P, KLP, TNT)

Yield: 1 cup

1/4 cup balsamic vinegar
1 teaspoon honey
2 crushed garlic cloves
3/4 cup olive oil
1 teaspoon crushed fresh thyme
Salt and pepper
Dash of hot pepper (optional)

Mix all ingredients in bowl, and pour over the vegetables to be roasted or grilled.

Suits all types of vegetables: peppers, eggplant, squash, onions...
