Roasted Vegetables a la Jane (P, TNT)

carrots
parsnip
sweet potato
zucchini

Cut these vegetables into thick strips. Cut an onion or two into wedges. Cut one or two tomatoes into quarters.

Make a mixture of a little olive oil, balsamic vinegar, and fresh crushed black pepper. Pour this mixture over the vegetables which have been placed on a piece of baking paper on an oven tray, so they are not on top of each other.

Bake on medium heat for about 45 minutes, the vegetables will still be a little crunchy, taste great. And your kitchen will smell great too!
