2 russet potatoes
Preheat the oven to 400°F.
Scrub the potatoes well, cut into quarters lengthwise, then crosswise. Place in a bowl. Toss with the oil, paprika, salt and pepper.
Arrange the potatoes in a single layer on a baking sheet and bake for 30 minutes, until tender, brown and crispy. Shake once during baking.
Remove from baking sheet and serve, with a little extra salt if desired.
Poster's Notes:
The skins on the potatoes were kind of tough, so I might peel them before doing this recipe again.

I had planned to make meatloaf this afternoon, since it's going to be a hectic beginning of the week, I pulled out 2 pounds of meat and then saw a recipe in the Parade magazine for Old Fashioned Meatloaf for Two with Oven Baked Fries. Without reading it, I decided to make it
