Potatoes, Oven Baked Fries (P, KLP, TNT)
Source: Sheila Lukins' "Simply Delicious" column, Parade Magazine
Serves: 2-3

2 russet potatoes
2 tablespoons olive oil
1/2 tsp. paprika
Salt and pepper to taste

Preheat the oven to 400°F.

Scrub the potatoes well, cut into quarters lengthwise, then crosswise. Place in a bowl. Toss with the oil, paprika, salt and pepper.

Arrange the potatoes in a single layer on a baking sheet and bake for 30 minutes, until tender, brown and crispy. Shake once during baking.

Remove from baking sheet and serve, with a little extra salt if desired.

Poster's Notes:
I had planned to make meatloaf this afternoon, since it's going to be a hectic beginning of the week, I pulled out 2 pounds of meat and then saw a recipe in the Parade magazine for Old Fashioned Meatloaf for Two with Oven Baked Fries. Without reading it, I decided to make it. Needless to say, I didn't have half the ingredients, so I winged it. Added some cracker meal, steak sauce, a package of onion soup, a minced onion and a clove of garlic, water, and 2 eggs. Baked it for an hour, and it was done to perfection. I had a Girl Scout meeting from 4-6, so I showed the fries recipe to my husband, got out the ingredients for him, and left. Came home to the tastiest meal we've had in a while. Definitely a keeper. Hubby did say the smoke alarms went off 3 times, but the food was not burnt....

The skins on the potatoes were kind of tough, so I might peel them before doing this recipe again.
