6 large potatoes, peeled
Cut each potato into quarters. Place in a 13"x9" baking dish. Toss potato and onion slices with olive oil, coating each slice. Sprinkle ketchup, salt, pepper, basil, and oregano on top, and toss.
Bake in a 400°F oven for about one hour, tossing frequently, until potatoes are tender.

I thought having all those potatoes on Pesach would be enough for a while, but this is a real tasty way to make potatoes and makes a very good side dish, quick to prepare.
