Potato Croquettes (D, TNT)

Serves: 6-8

2 cups cold riced potatoes
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon celery salt
2 tablespoons butter
1 egg yolk, slightly beaten
1 teaspoon chopped parsley
Few drops onion juice
Bread crumbs
1 egg, well beaten

Combine first 8 ingredients; beat until light and fluffy. Shape into cylinders.

Dip in egg and then into bread crumbs.

Fry in hot deep fat (380°F) until brown. Drain on absorbent paper. Serve hot.
