12 dried apricots, cut into 1/4" pieces
Soak the apricots in the hot water for 1 hour.
Toss the remaining ingredients and then place on a baking sheet with sides. Bake in a 450°F oven for 12 minutes, not more.
Toss the roasted mixture with the soaked apricots.
To heat: place in a microwave safe dish, cover with plastic wrap and cook on high for 2 to 3 minutes.
