1 large head garlic
Preheat the oven to 400°F.
Tightly wrap garlic in foil and bake until very tender, about 1 hour. Cool the garlic and halve the head horizontally. Squeeze enough garlic from the cloves to measure 2 tablespoon. Halve the beans lengthwise. Cook in boiling salted water until crisp-tender, 6-8 minutes and drain.
Heat the oil in a large heavy skillet over moderately high heat and cook the garlic with water, stirring until a smooth paste. Add the beans and cook, stirring to coat, 1 minute. Season with salt and pepper.
