Fennel, Braised w/Garlic (P, KLP, TNT)
Serves: 8

1 huge fennel bulb, cubed (freeze stalks for soup)
6 tablespoons olive oil
3 garlic cloves
3/4 cup broth

Cut fennel lengthwise then into cubes or slices. Discard core.

In a large skillet, heat oil and cook garlic until pale golden. Discard garlic.

Cook fennel, stirring occasionally until golden brown, about 15 minutes.

Add 1/2 cup broth and salt for taste. Simmer partially covered, stirring occasionally and adding more broth as needed, about 20 minutes.
