Non stick spray (such as Pam) or about 1 tbsp. olive oil
Slice the cucumbers about 1/2" thin discs. Do not peel. Thinly slice the scallions, both green and white parts. Heat skillet medium hot and spray or pour in a tbsp. of oil.
Sauté and stir the cucumbers until they become darker and softened, about 5 to 10 minutes. Toss with the thinly sliced scallions.
