2 pounds Swiss Chard or Romaine Lettuce
Fill a large pot with water and bring to a boil.
Rinse and trim the chard or lettuce leaves. Add leaves to boiling water and cook for 4 minutes.
Remove to a colander or large strainer and allow to cool and drain. When cooled chop cut into large strips.
In a large heated skillet add olive oil and minced garlic and fry until garlic is lightly colored.
Immediately add tomatoes and anchovies and gently cook on medium heat until softened. Add greens stirring and turning over so they are well coated with sauce.
Cook for 5-10 minutes, season with salt and pepper and serve hot.
