Carrots, Maple Roasted (P, KLP, TNT)

Carrots
Vegetable cooking spray
Maple syrup (I used the real stuff)

Cut carrots in half widthwise, then cut each piece in half lengthwise (or vice versa). Spray one or more baking sheets with cooking spray. (You can line the sheets with foil before spraying for easier cleanup.)

Arrange the carrots in a single layer on the sheets. Spray with cooking spray. Drizzle each piece with maple syrup. Bake at 400°F (200°C) until carrots are soft, about 40 minutes. Time will vary with the size of the carrot pieces.

Poster's Notes:
I needed a veggie side dish for tonight's supper, and all I had in the house were salad stuff and carrots, so I invented this carrot recipe. It was delicious and very easy. I used four large carrots for the two of us, and should have used at least double that amount. I'll know for next time.
