Carrots, Maple-Cinnamon Glazed (P, KLP)

Serves: 4

1 pound baby carrots
1 tablespoon KLP oil
1/2 teaspoon cinnamon
1/2 kosher salt
3 tablespoons maple syrup

Put oven rack on bottom of oven; heat to 400°F.

Put carrots in medium bowl with oil, cinnamon, salt, and 2 tablespoons of maple syrup. Toss until evenly coated. Spread in single layer on shallow baking pan.

Roast, uncovered, 20 minutes. Shake pan to turn carrots and distribute pan juices. Bake until carrots are tender, about 15-20 minutes more. Return to bowl.

Toss with remaining syrup. Taste; adjust seasoning. Serve immediately. Or if making ahead, carrots can be kept at room temperature for several hours and served room temperature or reheated until warm in microwave oven.
