Carrots, Caramelized (P, KLP, TNT)

Serves: 8 to 10

3 pounds carrots, peeled and sliced into 1/4" discs
1/2 cup sugar
3 to 4 tablespoons vegetable oil

Preheat oven to 400°F.

In a large bowl, combine the carrots, sugar, and oil. Toss to coat. Spread the carrots into disposable tins in a single layer.

Roast about 45 minutes to 1 hour on the middle and top racks of the oven until carrots are caramelized and begin to shrivel. Shake occasionally to prevent the carrots from burning.

For ease of preparation you can purchase bags of pre-sliced carrots. They are sold in bias cuts and coins; either are fine and a real time saver.
