2 bunches fresh broccoli, trimmed
Separate broccoli into florets and blanch in boiling, salted water for 4 minutes. Drain and rinse in ice water. Thoroughly drain and place in a lightly greased casserole.
Melt butter in saucepan and whisk in flour, stirring constantly for 2 minutes. Carefully whisk in stock and milk and simmer for 5 minutes. Add grated cheese and stir until melted.
Pour sauce over broccoli and sprinkle with cracker crumbs. Bake in 350°F (180°C) oven for about 30 minutes.
