Beets, Roasted w/Maple Syrup (D, KLP)

Butter (for the dish)
8 beets, peeled and quartered
1/2 cup freshly squeezed orange juice
1/4 cup maple syrup
2 tablespoons butter
Salt and pepper, to taste

Set the oven at 400°F. Lightly butter a 12" baking dish. Place the beets in the dish in one tightly packed layer.

Pour the orange juice over the beets and drizzle them with maple syrup. Dot them with butter, then sprinkle with salt and pepper. Cover with foil, shiny side down.

Transfer to the hot oven and bake the beets for 1-1/4 hours, occasionally spooning the pan juices over them, or until they are tender. Serve at once.
