Vegetable Soup I (P, TNT)

Serves: 6

1 large onion, chopped
1 clove garlic, chopped
3 potatoes, peeled & cut up
2 turnips, peeled & cut up
3 carrots sliced
15-ounce can stewed tomatoes
1 vegetable soup cube
1 package frozen peas
1/2 teaspoon curry powder
1/2 teaspoon cumin
Salt & pepper
1 teaspoon sugar

Brown onion and garlic in a little oil, then add rest of ingredients.

Cover with water and simmer 40 minutes.

Blend in food processor (not too smooth; you want some consistency). Adjust seasoning to taste.

Freezes well. Taste is better after a day or two.

Poster's Notes:
I actually doubled the recipe, but used 3 cans tomatoes and 3 vegetable soup cubes.
