4 pounds sweet potatoes/yams, peeled and put through the food processor
Boil sweet potatoes (yams) in water until "mashable."
Pour it all into a strainer, reserving a bit of the water. Blend with an immersion blender.
Mix in soy milk, orange juice, nutmeg and cinnamon until well blended. Heat through.
May be served at any temperature.
Poster's Notes:
While making sweet potato kugel last night I accidentally food processed WAY too many sweet potatoes. I decided to make mashed sweet potatoes out of them. Then, after I boiled them, it occurred to me that I can make sweet potato soup. Seeing as my 4-year-old asked me for the "orange" soup this morning, I decided to wing it, with VERY yummy results.

1/2 to 3/4 cup orange juice
Nutmeg, to taste
Cinnamon, to taste
Use more nutmeg than cinnamon.
