Split Pea Soup, Yellow II (P, TNT)

Serves: 8 to 12

1 bag yellow split peas
8 cups water or vegetable broth
2 large onions, diced
4 to 6 carrots, sliced
2 to 4 stalks celery, diced
Madras curry powder
Salt and pepper

Sauté the vegetables for 10 minutes or so. Add the split peas and broth; bring to a boil then lower to a simmer. Cover and cook for 45 minutes. The vegetables should be tender and the peas should have fallen apart.

Season to taste with salt, pepper, and curry powder. (Yellow split peas are sweeter than green; using green ones will change the taste).
