Split Pea Soup, Dutch (M/P, TNT)

Yield: Approximately 1 gallon

750g split peas
3 liters stock (pareve or beef)
250g potatoes (may use some more)
1 bulb celeriac (celery root)
1 bunch of celery (the green leaves)
2 leeks
1 onion
some parsley

Boil split peas in stock for about 1-1/2 hours.

Clean and chop other ingredients and add. Simmer for another half hour or so.

For a meat meal, you can add frankfurters or other salted meat if you like.

My mother's--the Dutch way. I make it several times each winter--am addicted to the stuff.
