Pumpkin Soup I (D, TNT)
Source: adapted from Norene Gilletz's MicroWays
Serves: 8

1 large onion, diced
1/4 cup margarine, or butter, or olive oil
1 or 2 pieces of fresh pumpkin (about 1 lb.)
spices (dill, salt, pepper, pareve chicken soup powder)
1-1/2 cups milk
1-1/2 quarts water

Sauté the onion in the oil.

Add the pumpkin, cut into chunks and the spices together with about 1-1/2 quarts of water. Simmer for 20 minutes.

Puree the pumpkin (I have one of those wand-type blender sticks). Add the milk and heat thoroughly.

Poster's Notes:
It is a warm thick soup and the kids love it!
