Potato Spinach Soup (D, TNT)
Source: adapted, can't remember source of original recipe
Serves: 4

1 small onion, chopped
1/2 cup green pepper, chopped
2 cloves garlic, finely chopped (or use 1/2 tsp. garlic powder)
2 (14-1/2 oz) cans vegetable broth
3 cups mashed potatoes
2 cups (about 16 oz.) creamed spinach (premade or frozen)

Sauté onion, pepper, and garlic in about 2 tbsp. of the broth until soft.

Add remaining broth and bring to boil.

Add mashed potatoes and whisk until smooth. Heat about 5 minutes over med/high heat then add creamed spinach.

Whisk soup gently to mix in spinach. Simmer 8-10 minutes until heated through.

Add salt, pepper, and paprika to taste.

Poster's Notes:
This quick easy recipe is great to use up leftover mashed potatoes and creamed spinach. If you don't have any and you are in a hurry, reconstituted instant mashed potatoes and frozen creamed spinach work just fine.

You can also add other vegetables as desired.
