Potato Soup I (P, TNT)
Source: "Spice and Spirit"
Serves: 6

4 large potatoes, diced
1 large onion, diced
4 cups water
1/3 cup oil
1/4 cup minced parsley (which I didn't put in)
2 tsp. salt
1/2 tsp. pepper

Place all ingredients in a 4-quart pot.

Cook uncovered over moderate heat 30-40 minutes, or until potatoes are soft, stirring occasionally.

With wooden spoon press some potatoes against sides and bottom of pot to break into small pieces. I used a hand blender better known as a "foot"! Enjoy!

Poster's Notes:
I made this soup for Shavout and it was really delicious but was it too spicy it seems that everything from this cookbook is like that but very good so I would advice you to put less in and if you like it more spicy then just add. Also it was just enough for 3-4 people.
