Mushroom Soup, "Cream" I (P)
Yield: 1-1/2 cups

1 tablespoon margarine
1/4 cup chopped mushrooms
1 tablespoon minced onions
3 tablespoons margarine
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/4 cups soy milk, heated

Melt 1 tablespoon margarine and sauté vegetables lightly. Remove from pan.

Melt 3 tablespoons margarine. Whisk in 3 tablespoons flour and seasonings. Cook for about one minute, stirring frequently.

Slowly add hot soy milk, stirring with a whisk to prevent lumps. Stir in chopped mushrooms and minced onions. Cook until thick, stirring constantly.
