Lentil Soup, Red V (P, TNT)

Serves: 6

1-1/4 cup red lentils
1/2 cup white rice
1/3 cup vegetable oil
1 large yellow onion, chopped
6 cups warm water
1 tbsp. vegetable stock
1 tbsp. cumin
1 tbsp. olive oil
1 tbsp. salt
Lemon wedges (optional)

Soak lentils and rice in warm water.

Add onion to hot oil in large pot. Add 6 cups water and bring to boil.

Drain lentils and rice, and rinse well. Add to boiling water with onion. Boil 15 to 20 minutes. Add vegetable stock, cumin, olive oil, and salt.

Serve each bowl with a wedge of lemon, if desired.
