2-4 tbsp. extra virgin olive oil
Heat oil in the bottom of a 2-qt. (or larger) pot. Briefly sauté garlic in hot oil (do not permit garlic to brown or it will turn bitter.)
Add water and bring to boil. Cover and allow to simmer at least a half hour, up to two hours, covered. Taste and adjust seasonings.
Just before serving, in separate bowl whisk the eggs. Bring soup back to low boil, add eggs, and whisk soup briefly. Serve immediately, garnished with croutons if used.

Here is a recipe I use for garlic soup. I believe this one is from Spain or Portugal, not from Czechoslovakia, but it's extremely good. I make it every time my dh gets a cold Mind you, nothing will cure Aaron if he's determined to be sick but if he wants to get over it this almost always works.
