3 carrots, peeled and diced
Add water to come up to about 3" above the vegetables and bring to boil, then simmer for at least 2 hours.
10 minutes before serving I throw in a couple of handfuls of small egg noodles or small bow ties.
Poster's Notes:
I add any leftover gravies that I have in the freezer along with any pieces of frozen leftover chicken, sausage and beef which I dice up.
Everyone always raves about it, and I never have enough leftover for Shabbos so I always have to make chicken soup for that Shabbos.

1 (18-oz.) can diced tomatoes (any flavor you like; I use roasted garlic)
1 (16-oz.) bag frozen mixed vegetables
1 (16-oz.) bag sliced zucchini
1 (16-oz.) bag of diced frozen butternut squash
Salt
Pepper and any other herbs and spices you might like
Small egg noodles or small bow ties
We always have a Friendship Soup that got its roots from my kids' nursery school. Every child brought in one raw vegetable and the teachers and the aides would clean and wash and cut them up in small pieces, place them in a soup pot and simmer with pareve broth until everything was cooked tender.
