2 to 4 cups veggies, chopped (broccoli stems, carrots, squash, leftovers)
Put veggies in a large saucepan with water to just cover. (If using leftovers, save cooking (or steaming) water as part) Cook gently until just tender.
Using an immersion (hand held) blender right in pot, mash the veggies. (Note: I use potato flakes until the mixture is as thick as I want it. ) Taste for flavour...you may want more salt and pepper.
Serve hot or chilled.

1 or 2 large potatoes (or potato flakes)
garlic powder to taste
salt and pepper
Pinch of sage, basil, oregano as desired
Few drops hot sauce, as desired
The amounts are ad lib, as I use what is in the fridge!
