Corn Chowder VI (P)

Serves: 6 to 8

1 box organic corn soup (such as Imagine)
1 tablespoon oil
3 small or 2 medium potatoes, peeled and diced into 1/2" cubes
1 small onion diced
1/2 roasted or raw red bell pepper, diced
1/4 jalapeno pepper, minced
1/4 teaspoon ground cumin

Heat oil in 2 quart pot, add veggies and cook, stirring occasionally, until onions and potatoes just start to brown.

Add corn soup and the cumin, bring to boil and simmer for about 15 minutes. This can be served hot or cold.
