Sopa Del Sol (D/M/P, KLP, TNT)

Serves: 4 to 6

3 cucumbers, peeled and coarsely chopped
1/2 cup chopped onion
1 clove minced garlic
2 cups chicken or vegetable broth
2 cups sour cream or pareve substitute
3 tbsp. white wine vinegar
Salt and white pepper
Chopped tomatoes and minced scallion tops, for garnish

Place cucumber, onion, garlic, and broth in blender or food processor. Whirl until well blended.

Place cucumber mixture in large container and stir in sour cream or substitute, vinegar, salt and white pepper to taste. Chill well.

Serve garnished with chopped tomatoes and minced scallion tops.
