1 large cucumber, peeled, seeded and finely diced
Drain juice from the stewed tomatoes into large container. Whiz tomatoes in food processor. Add everything to container with the reserved juice. Stir well and chill.
May be garnished with more diced vegetables or garlic-flavored croutons.

1 small green pepper, finely diced
1/3 cup onion, finely diced
3 cups tomato juice
2 14-1/2-ounce cans best quality stewed tomatoes
2 teaspoons beef base or powder or 2 beef or beef-flavored cubes melted in a little of the tomato juice
2 teaspoons Worcestershire sauce
1/4 cup red wine vinegar
5 or 6 cloves garlic, minced or crushed
5 to 10 shakes Tabasco-type hot sauce
1/4 cup extra virgin olive oil
The vegetables may be chopped in a food processor but should be chopped, not mush. Also, I have friends who hate green peppers so when they are expected, after chopping the green peppers, I put them into my potato ricer with the fine blade and squeeze out the juices. It seems to make a difference. My green pepper-hating friends even request that I make gazpacho for them.
