Gazpacho II (P, KLP, TNT)
Source: Composite of many recipes
Serves: 6-8

1 28-32 oz. can of tomato juice
4 cloves of garlic, peeled
1 small onion
1 1/2 cucumbers
1 tsp. oregano
1 tsp. dried basil or 2 tbsp. fresh
2 tbsp. fresh chopped dill
pinch of thyme and /or pinch of tarragon
1/2-3/4 chopped red pepper (and green pepper if desired)

Pour 1/2 of tomato juice in processor with remaining ingredients. Blend very well. Then add remaining tomato juice and water if too thick. Chill for 2-3 hours and serve very cold.

Poster's Notes:
The flavors blend well and are stronger on the second day. Feel free to adjust seasonings to taste. I use both tarragon and thyme. I leave out the green pepper as I am sensitive to it.
