Chicken Noodle Soup, Vietnamese (M, TNT)

Serves: 3

3 cups broth
1/2 cup chopped chicken or fish
1 tbsp. oil
1 clove garlic, minced
1 tbsp. ginger, minced
3 tbsp. fish sauce (or soya sauce for those who observe the custom of not mixing fish and meat in the dish)
chilies to taste
3 egg Noodle "nests"

Sauté meat, garlic, and ginger in oil. Add broth.

Bring to boil, simmer 10 minutes, remove from heat and add fish sauce. Put cooked noodles in each bowl and ladle on broth.

Poster's Notes:
During the course of all the chicken soup discussion, I was fondly reminiscing about my mom's. I haven't eaten it in 10 years, no longer eating meat, but I do miss it, especially on rainy days! We are not Vietnamese, but lived in Hong Kong and added many Asian dishes to our family favorite repertoire.
