2-1/2 cups chopped onion
In a pot, sauté the onions in the oil for 5-10 minutes.
While the onions sauté, dice the potatoes and chop the cauliflower.
Stir the cumin, fennel, and potatoes in the pot and cook for 1 minute. Add the hot water. Cover, turn up the heat, bring to boil. Add the cauliflower and bouillon powder and return to boil. Lower heat and simmer, covered for 10 minutes, until the vegetables are tender.
Puree. Add lemon juice, salt and pepper. Reheat if necessary. Serve garnished with chopped tomatoes, chives. or scallions.
