Two Potato Soup (D, TNT)

Serves: 8

7 cups broth
3 medium potatoes
2 sweet potatoes
1-1/2 tsp. olive oil, optional
1 large leek
1-1/2 tbsp. paprika
1 cup low-fat milk
1 tbsp. dry dill
1/4 tsp. tamari soy sauce
Salt, to taste
Pepper, to taste
2 to 3 ounces Neufchatel cheese, cut up

Bring 6 cups broth to a boil.

Chop potatoes and sweet potatoes and add to broth. Simmer for 15 minutes, partially covered.

Chop the leek and sauté in oil for 5 minutes. Stir in paprika and cook for 1 to 2 minutes more. Stir in remaining stock.

Add this mixture to the simmering broth. Stir in milk, dill, tamari, and salt and pepper. Simmer until heated through. Stir in the cheese until melted.

Here is a recipe that I made before or after a fast recently. Thought I would share it with everyone as it was very well received by my family.
