Vodka Sauce (D)

Yield: About 6 cups

4 cups marinara sauce
1 cup vodka
1/2 cup heavy cream
1/2 cup Parmesan cheese, freshly grated

Simmer the sauce and vodka until reduced by 25%, about 20 minutes. Add cream, and when heated add the cheese.
