Pizza Sauce (P, KLP)
Source: Peter Reinhart's "American Pie: My Search for the Perfect Pizza"
Yield: 4 cups sauce

1 28-ounce can crushed tomatoes
1/4 teaspoon ground black pepper
1 teaspoon dried basil (or 2 tablespoons minced fresh basil)
1 teaspoon dried oregano
1 tablespoon granulated garlic, or 5 cloves fresh garlic, minced or pressed
2 tablespoons red wine vinegar, or freshly squeezed lemon juice
1/2 to 1 teaspoon salt

Combine all ingredients in a bowl and mix. Adjust salt to taste.
