Peach Sauce

Yield: approximately 3 cups

1 cup sugar
2 tbsp. cornstarch
2 packages (12 oz. each) frozen peach slices, defrosted
1 tbsp. grated orange rind
confectioners' sugar

Combine sugar and cornstarch; mix. Stir in peaches and orange rind. Cook over low heat, stirring carefully, until clear and thickened. Keep warm.
